Zucchini Fritters.
This is a staple Italian recipe that I grew up having all throughout my life. My grandparents used to have a huge garden and the zucchini definitely thrived. I hope you enjoy this recipe as much as I do.

These fritters require minimal ingredients and effort! The perfect snack or appetizer to make. A true classic in most Italian households. This recipe makes 8-10 depending on how much you scoop. You will need a small frying pan and a big bowl and spoon to mix. Measuring tools are optional as you can eyeball this recipe and it will be just as delicious.
Ingredients
2 medium zucchini's grated
1 garlic clove minced
1 tsp baking powder
3 tablespoons all purpose flour
handful of freshly chopped Italian parsley
handful of freshly torn basil
1/3 cup grated parmigiana reggiano
1 egg
1 tsp salt
1/2 tsp pepper
1/2 cup olive oil for frying (you can use any oil you wish)
zucchini flowers (optional)
Step 1: Let’s Get Started
Start by grating the zucchini. Place in a paper towel and squeeze out some of the liquid. Add the zucchini to a bowl and crack in one egg. Lightly mix and then add in the baking powder and flour. Next add the chopped garlic and herbs and mix together.
Lastly add in parmigiano, salt and pepper. Once all the ingredients are in the bowl mix well until combined. Your mix should look pasty and thick like pancake batter.
Step 2: The Frying
Next heat up pan on medium and add the olive oil. Scoop a tablespoon of filling into the oil and fry for 2-3 minutes a side. Dab the excess oil on a paper towel. Serve warm.
